Doesn’t Microsoft already keep a recycle bin?
Thirty to ninety days, in the same service, reachable by the same administrators. That is neither an independent backup nor protection against a compromised account.
Where are the copies stored?
On object storage in Switzerland, named in the contract, encrypted, with a write lock.
How long to restore a mailbox?
A few hours for a mailbox, a day for a full site, during business hours.
